But, But ... They’re PLASTIC! (Not really)
Well, no, they aren’t really plastic in the conventional sense. The exoglass cutters are fiberglass reinforced and, while retaining some flex, are both very strong and sharp. The material is such that the edges can be quite thin and hold up virtually forever with normal use. These cutters also have a comfortable rolled edge on the other end. But unlike metal cutters, there’s no seam and no ripples. They are completely smooth and comfortable against your palms in use. They release easily too, as the material itself is very smooth.The set is finely-graduated. While you may or may not care about that for, say, making biscuits, it’s quite handy to find just the size you need when making pastry or decorating (think fondant). The set is expensive. I hesitated myself before buying, but this purchase is one of those where the initial sting of the investment fades away quickly given the sheer pleasure of the use. In my opinion, this is the best professional cutter on the market.Highly Recommended

Expensive but necessary for my uses
I primarily use the 80 and 90 that are included in this for making gyoza and dumpling wrappers. I like them a lot because they're one concentric circle with no seam and therefore no problem cutting them out with the thin I use. My problem is with the vendor rather than the item. I had purchased a single number 80 and wanted to return it, only to find out that they send a full Form to fill out instead of simply accepting the item. I suppose that's because it is expensive and they want to make sure it's not broken. However I was furious with the uncooperative attitude and the tone of their exchanges. I am stuck with an extra number 80 that I cannot use or will not use. They're expensive enough without having to fight over this. It would have been more reasonable of them to agree to just take the number 80 they were going to send me and keep it and issue me my refund. Having said that, I am still glad that I have these. Extremely overpriced but glad to have them.
