Do these work when swimming with a tether

The goggles offer Swim Spa mode for partner and non-partner swim spas. Swimming with a tether, you can select the non-partner swim spa mode, which let's you track your time, real-time stroke rate, calories, and heart rate (with compatible heart rate monitor).

Is there an open water setting which measures your distance?

The goggles are designed for pool training, and they don't measure distance. For pool use, you would enter the pool size and the goggles would count how many laps you do (thereby calculating distance). Some swimmers still use the goggles in open water by setting their pool length as "unknown." This lets you track your time while you swim, and if you have the Polar OH1/OH1 + sensor, you can monitor your heart rate in real time. You would also be able to review your time, stroke rate/count, and calories when you rest.
