Q: Can I clamp onto the vertical microphone stand post, but pivot it parallel to ground to hold laptop?

It will do that, but when it is horizontal it is directly over the end of the stand if it is leaned back from the position shown in the picture. The vertical part swivels on the end of the arm so it should be able to turn 180.

Q: How wide is the clamp mouth? What is the thickest thing you could clamp this to?

I have it clamped on the handle bars of a bike to use my iPad during exercise. I think it is somewhere between 3/4" and 1" in diameter. I hope this helps.

Q: Can the plate be removed from the mounting arm and used on an existing VESA compliant monitor mount?

You may be able to "modify" the actual plate mount to accept a VESA compliant monitor mount, but I donl;t know since I use it for it's intended purpose as a music stand attached to my boom mic stand as I'm a singing drummer.The challenge will be in the mount. The arm attaches to the plate by sliding onto the arm. It is shaped a little like a pyramid where the top is smaller than the bottom so that the plate slides into the arm and then tightens to the arm/plate by means of a screw. my email address is etheridgev@gmail.com and if you send me yours I can take actual pictures of it and send to you.I hope this answers your question.Regards,Vern
