Q: Does cadet single pole thermostat have an off setting?

If you are asking about this t-stat listed, no - it has a set point, I think of 45°F - there is no OFF setting, and this t-stat comes on way before 45°F, at least the one I received does.

Q: Are these heaters supposed to keep warming unless turned off? Mine goes on for a while, but then turns off even if I have not touched the switch...

Once it gets to the set temp, it will "shut down" until the temp drops below the set temp. Once the temp goes down, the heater will kick back on.
